Rohini Dey
Founder & Owner
Vermilion
Rohini dreamt, originated and executed the Vermilion
concept. As an entrepreneur, Dey has combined her business savvy
with her passion for food. Rohini has been responsible for each
phase of Vermilion’s establishment and growth in Chicago.
She developed the concept, raised the debt finance and equity investment,
finalized the location, secured the legal structure, designed the
interior, built her professional team, crafted the menu and launch
and currently watches over ongoing operations. Vermilion has received
local and national attention, including honors as “Best New
Restaurant” Travel & Leisure, Town & Country,
USA Today, Chicago Magazine, Bon Appetit, Wine Enthusiast, Citysearch
and Gayot. Rohini has also been written up by Oprah
Magazine, Fortune Small Business, Fortune, The Chicago Tribune,
and Today’s Chicago Woman.
Rohini previously worked as a consultant at the leading management
consulting firm, McKinsey & Co., where her project experience
spanned a range of industries with a focus on growth and business
building. She also worked as a consultant for the World Bank in
Washington, D.C, where she managed projects in foreign investment
policy and infrastructure privatization, and also published with
the World Bank. Rohini has also hosted, supported and been a keynote
speaker for several professional women’s organizations including,
McKinsey Alumni events, Columbia University, Indus Women’s
League, Culinary Historians, and the Kellogg Women’s Business
Conference.
Rohini holds a Master’s degree in economics from the Delhi
School of Economics (India’s premier institute) and a Doctorate
in management science from the University of Texas.
